Its very bony, like northern pike. Moreover the fine bones are forked, which makes them hard to remove prior to cooking. This classes it with rough fish. Don't get me wrong, I like northern pike, except for removing the bones while eating!

The answer is actually quite simple.....American's refuse to eat carp. There is a stigma that all carp are bottom dwellers and not good tasting. There is a big initiative here in Chicago, and in Illinois in general, to show people that Asian carp are meaty and tasty.事实上答案很简单……

I have never had problems eating carp but there is a stigma of it being dirty, in other words poor peoples food. It is not the farm runoff you need to worry about but the federal warning to not eat any fish caught in any river, lake or stream in the USA due to high mercury levels from coal fired power plants.

I agree with a lot of you, these fish can be and need to be exploited for something. Whether its for feed, fertilizer, or to feed a family of four, some use can be found. If they are taking over these streams and lakes, why are we just poisoning them? Let's do something with these fish. Instead of investing money in control projects which will just be wasted, we should be investing in startups to harvest and create products from these fish.

When my family accidentally caught carp, we would usually just throw it on the bank as "fertilizer". The bigger ones we gave to our bohemian neighbors who would smoke them. It tastes OK smoked, but that doesn't do anything about all the bones. Largest one we caught was around 57 pounds.
